ROSEMARY POTATOES

Very simple recipe, have it at any meal time or even as a snack with ketchup.

Use thyme as an alternative or without any herb or spice and still enjoy the potatoes them crispy. Hope you get to enjoy yours!

Ingredients(2 Servings)

  • Clean diced potatoes(you can also peel them)
  • Fresh/dried rosemary
  • Spice of your choice. I used smoked paprika.
  • In a suitable pot, heat up some water and add salt to it
  • Add the potatoes(remember you can also peel them, but its tastier with the peels on)
  • Allow to come to a boil…..and simmer for about 5 minutes or
  • Until slightly soft but be careful not to overcook since we will still cook them on a pan. Drain off the water and set aside.

  • Cook on high heat until they start to brown. Add the chopped onion…
  • Continue cooking on high heat while stirring until the onion is lightly browned.
  • Add the blended tomatoes and garlic.
  • Allow to simmer on low heat for about 1 minute or until the tomatoes turn into a deep red colour.

  • In a large fry pan, add little oil
  • Fry some diced onion and garlic if you like.(this is optional you can also fry without the onion).
  • Allow the onions to brown slightly
  • Add the boiled potatoes and allow to start browning.
  • Add little oil to fasten the browning.

  • Add your desired spice for extra flavour. I used paprika but you can also use cumin, chili powder or curry powder.
  • Add the chopped rosemary…..Stir until you all the potatoes are browned evenly
  • Serve hot for breakfast, lunch or dinner and enjoy!
