Ingredients
- 50g flour
- 50g margarine,
- 150ml Milk
- Good quality cheese
- Precooked cauliflower.
NB: You will also need an oven proof dish or you can still do it in a pot that you can put in the oven.
STEP BY STEP PREPARATIONS
- Place the pre-cooked cauliflower in a dish and set aside.
- For the cheese, I chose Gouda as it has a mild flavour. You may also use cheddar or mozzarella, the idea is to use a semi soft cheese which is easy to grate.
- Grate about 2 handful worth of cheese and set aside.
- To make the white sauce, melt the butter in a suitable pot.
- Add the flour, mix the flour with the butter and mix until flour is not visible.
- Allow to cook for about a minute but don’t allow to brown.
- Add hot milk to the flour mixture(roux)-Heat your milk in advance before starting the roux.
- Allow to come to a boil as you whisk to break the lumps.
- Add salt and pepper to taste and a pinch of nutmeg if you have some.
- Whisk and give it a taste so as to adjust the seasoning.
- Add a little of the grated cheese and mix. Add more milk if the white sauce is too thick.
- Pour the white sauce over the cauliflower.
- Spread evenly until all the cauliflower is covered.
- Sprinkle the rest of the cheese at the top.
- Into a hot oven (200ºC) it goes. Bake for about 10min and when it starts to bubble increase the heat so that it starts to brown.
- Remove when it’s nice and brown.
- Dig into it while hot and serve….You can enjoy it as it is or have it as an accompaniment to your meat dish.
