Very simple recipe, have it at any meal time or even as a snack with ketchup.
Use thyme as an alternative or without any herb or spice and still enjoy the potatoes them crispy. Hope you get to enjoy yours!
Ingredients(2 Servings)
- Clean diced potatoes(you can also peel them)
- Fresh/dried rosemary
- Spice of your choice. I used smoked paprika.
- In a suitable pot, heat up some water and add salt to it
- Add the potatoes(remember you can also peel them, but its tastier with the peels on)
- Allow to come to a boil…..and simmer for about 5 minutes or
- Until slightly soft but be careful not to overcook since we will still cook them on a pan. Drain off the water and set aside.
- Cook on high heat until they start to brown. Add the chopped onion…
- Continue cooking on high heat while stirring until the onion is lightly browned.
- Add the blended tomatoes and garlic.
- Allow to simmer on low heat for about 1 minute or until the tomatoes turn into a deep red colour.
- In a large fry pan, add little oil
- Fry some diced onion and garlic if you like.(this is optional you can also fry without the onion).
- Allow the onions to brown slightly
- Add the boiled potatoes and allow to start browning.
- Add little oil to fasten the browning.
- Add your desired spice for extra flavour. I used paprika but you can also use cumin, chili powder or curry powder.
- Add the chopped rosemary…..Stir until you all the potatoes are browned evenly
- Serve hot for breakfast, lunch or dinner and enjoy!
