Ingredients
- Diced pineapple
- Coloured peppers
- Diced onion
- Left over rice
- Smoked sausage (choma sausage)
- Chili flakes (optional)
- Turmeric powder
- Curry powder
- Raisins
- Add little oil to a hot pan to fry the sausages. The idea is to quickly cook the sausage on high heat. Remove from the heat when they are evenly browned on the outside. Set aside to use add them later.
- Add the onions and colored peppers to the hot pan/pot. Allow to cook for about 1 minute or until soft.
- Add curry powder to taste as well as turmeric powder. Give it a quick stir and cook for a few seconds. Add little chili if you want some heat.
- Add the left over rice, stir into the peppers and allow the rice to be heated.
- Add the sausage meat when the rice is hot. Add the diced pineapple….
- If you like you can also add some raisins for extra texture and sweetness. Give everything a good stir taking care the rice doesn’t burn.
