Ingredients
- Sausages (beef or pork)
- Peanut butter
- Tomato paste
- Chopped onion
- Garlic
- Coriander
- Chopped Red, Green and Yellow Pepper
STEP BY STEP PREPARATIONS
- Start by heating your pan with little oil then add sausages cut into chunks.
- Allow to brown evenly on all sides then set aside on a plate. They should not be fully cooked as we will cook them more later.
- Add chopped onion and garlic to the same pan and allow to cook on medium heat. If you like chilly like me, you can add a little at this point
- For extra flavour, add a little curry powder or cumin. Stir and allow to cook till slightly browned.
- Add the coloured peppers or any vegetable you may have. Add the tomato paste (about 1 tablespoon). We don’t want a lot of it, it’s for colour.
- Stir everything and cook for about 1 minute and add the sausages.
- Add about 2 tablespoon of peanut butter, the amount is based on the amount of food
- Stir to allow the peanut butter to melt. Add little hot water to stop it from sticking on the pan and scrap off the stuck peanut butter as you stir into the sausages.
- Finally add enough water to cover the sausages and allow it to come to a boil. If the sauce is too light when it boils, add little more peanut butter.
- Add some salt to taste.
- Stir and taste the sauce.
- Cover the pan to allow the food to simmer for about 2 minutes on low heat to cook the sausages fully.
- Check if the thickness of the gravy is thick to your liking. The more you cook the more the sauce will be thick as the water evaporates.
- Turn off the heat…. Serve over rice or mashed potatoes.
