This is a simple but delicious chicken recipe that you can prepare for you family or guests and wow them by plating like I have on this guide and I PROMISE you will be the star of your home. Use the same recipe to marinate your chicken for grilling, just add little oil and garlic pate/ginger.

In this guide you will learn how to make the chicken and the Veggies that would go well with this.
Place your chicken into a mixing bowl and season the chicken with powdered cumin, turmeric, paprika and then crack some black pepper. In case you don’t have any of these at home, you can also use curry powder and if you’d like it hot add some cayenne pepper
Ensure that you clean your hands before using them to rub in the dried spices onto the meat. Mix well until all chicken is evenly coated with spices. DO NOT ADD SALT AT THIS POINT. If you are not pressed for time, you may set aside the meat in the fridge for a few hours or even overnight to allow the spices soak into the chicken. This is optional for you may as well proceed to cooking the chicken immediately
Select a pot/pan that’s large enough to accommodate the chicken making sure that all the pieces are not on top of each other but rather that each piece touches the base surface of the pan/pot. To a hot pot/pan add little oil. Once the oil begins to smoke, you may proceed to add the chicken onto your pan.
The idea is to browning the chicken. When the first side is brown, turn the pieces to brown the other side. Add your sliced onion and stir that the onion may cook.
Add salt at this point.
Continue cooking as you stir while on high heat.
To get a deep brown colour and extra flavour, add little tomato paste. In case you don’t have any tomato paste you may add 1 chopped tomato instead. Add little water to remove any browning stuck on the pot as we approach the finish point. Stir some more.
Covered the chicken that it may cook completely on the inside. This should take about 3 minutes. Chicken is ready when liquid coming from the bone is clear. If it’s pink or red it still needs more time.
FOR THE GRILLED VEGGIES
Heat your pan/pot until it’s very hot and while on high heat add a little oil then start cooking the carrots because they are harder in comparison to the rest of the veggies. After about 1 minutes add the rest of the veggies. You can alternatively use whichever vegetables you have available
Stir and allow for the veggies to start browning evenly.
Add salt and pepper to taste.
Keep stirring to ensure even brown of the veggies. This should take about 3 minutes to cook.
