You may also know this as Farmers Pie and to some Shepherds pie(when made with lamb). If you don’t have an oven, you can prepare it and serve the mashed potatoes separately or as a pie skip the oven part but make sure to have the meat is hot and serve immediately.It’s basically mince meat and mashed potatoes and it’s a complete meal in one but to see how to bring it together follow the steps and enjoy!
Ingredients(2 Servings)
- 1kg Minced meat
- 1 cup coloured peppers (diced)
- 1 cup cooked peas
- 1 cup carrots (diced)
- Onions
- Garlic
- Potatoes to make mashed potatoes.
- The meat….Heat up your pot and add little oil. When the oil starts smoking, add the minced meat. Make sure the pot you are using is large. Spread the meat to fit the surface of the pot. If you are using a small pot the meat will start boiling (which is what we don’t need.
- As the meat starts t brown add chopped onions
- The heat is still on high and the meat is not yet stirred.
- Add the diced carrots. We are adding the carrots now because they take a longer time to cook than the other vegetables.
- If you have dried/fresh herbs like thyme or rosemary, black pepper add a little for extra flavour.
- Stir everything now adding little oil if the meat is too dry and sticking to the pot. Break any lumps of meat.
- When cooking minced meat the idea is to make sure all pink/red colour is gone and the meat is cooked.
- Add salt to taste, sliced garlic. Stir and cook for about 1 minute.
- Allow the meat to brown for extra flavour. Heat is still on high at this point.
- Add the coloured peppers or any other vegetables you may have. The more veggies the better.
- To make our sauce thick I added 2 tbsp plain wheat flour
- Add 3 chopped tomatoes or tomato paste
- Stir and allow to cook. What we are doing is building layers of flavour as all ingredients come together. Add a little water to fasten cooking of tomatoes. You can also add cooked peas.
- Cover the pot and allow simmer
- Minced meat stew ready for the next stage. Allow for it to cool down.
- To make creamy mash potatoes
- Clean and dice your potatoes, boil in salty water, when cooked, drain off the water.
- Add your preferred spice, I used Nutmeg.
- Add margarine
- Add milk cream
- Pound and mix well till the potatoes are mashed.
- Taste and adjust seasoning
