Very Berry Muffins Recipe


A simple recipe to follow and the trick is in mixing the berries into the dough and and you mix they will get crashed and what you get is muffins with a “very berry flavour”

This recipe will make 24 small muffins. You can also divide the ingredients by 2 and make about 12 muffins


  • 950g Self Raising Flour
  • 290ml oil
  • 4 Eggs
  • 290g Sugar
  • 200g Berries(Raspberries,strawberries,fresh/frozen)
  • 100ml water or fruit juice(apple/orange)


  1. Start by preparing your muffin tins by greasing lightly with little oil.
  2. Pre-heat the oven to 180ºC  (170ºC Fan)
  3. Sift the flour and set aside in a large bowl. Mix the fruits, sugar, eggs, water/fruit juice in a separate bowl and oil then add to the sifted flour.
  4. With a wooden spoon or by hand, mix all the ingredients together to form a soft dough.
  5. Fill the muffin pan 3/4 full using a spoon or ice cream scoop and bake in the preheated oven for approx. 25 minutes or until golden brown.
  6. Remove from the baking mould while still warm and sprinkle with icing sugar and enjoy warm
