Simple Roast Chicken Recipe

Ingredients:

  • 1 Whole chicken(1.5kg)
  • Salt
  • Freshly ground black pepper
  • Softened Butter/Margarine(You can also use oil)

For stuffing:

  • 1 whole Onion(cut into 4)
  • 3 cloves Garlic
  • Rosemary
  • Lemon/Orange slices(optional)

Method:

  1. Start by trimming off any excess fat on the chicken and when done pat the chicken dry using a paper towel. Remember the chicken needs to be at room temperature just before cooking.
  2. Turn on and preheat your oven to 220ºC
  3. Rub the softened butter on the chicken evenly then liberally sprinkle salt and pepper.
  4. Stuff the chicken cavity, with the lemon slices, garlic, lemon and rosemary. Tie the legs together with a kitchen twine and tuck the wing tips under the body(optional).
  5. Set the chicken on a roasting tray with the breast looking up and transfer into the hot oven.
  6. Roast for 15min then reduce the heat to 180ºC and roast for a further 1 hour or until cooked through using the tips I provided above.
  7. When cooked, remove the chicken from the oven and set aside to rest while covered before “digging in”
