OSSOBUCO STEW

Ingredients (You can use any other vegetables you have)

  • 3-4 pieces Ossobucco
  • 2 zucchini
  • 2 large onions
  • 7-8 whole cloves
  • 2 tbsp. tomato paste
  • 2 large carrots
  • Handful of mushrooms
  • Salt
  • Pepper
  • Heat your pan with a little oil, place your meat, the idea is to make sure all your meat touches the pot to get nice and brown.
  • Turn too cook the second side pressing down to make sure all sides touch the pot.
  • Take off the pot when browned on both sides

  • Add the onion and carrots and other vegetables such as celery to the same pot you used the meat
  • Stir and allow to cook on high heat and make the vegetables to brown
  • Add the mushrooms and whole garlic and keep cooking. Add fresh/dried thyme if you have some.
  • Add 1 tbsp tomato paste when the vegetables are browned evenly. Stir and cook for about 1 minute until all vegetables have turned reddish..

  • Add a little plain wheat flour (about 3 tbsp.) that will help make the gravy thick later.
  • Allow to cook until you don’t see any flour. It should take about 1 minute
  • To make things more interesting you add some brandy or whiskey to deglaze the pot…This will add a good flavour depending on the liquor used but it optional as you can use water as well.
  • Add the meat back to slowly cook with the veggies. Add hot water to cover the meat….

  • Don’t forget to add salt and pepper to taste. If not sure you can add more later after tasting…stir and allow to come to boil.
  • Cover and allow to slowly cook on low heat for 1 1/2 hours or until the meat is soft and detached from the bone.
  • As it cooks the sauce will become thick from the flour we added earlier.
  • Add more hot water as the cooking goes on but don’t overdo it.

  • When cooked you need to have a thick sauce and the meat almost falling off the bone.
  • Lastly for the zucchini, cook them separately on a nonstick pan to evenly brown and don’t forget to season.
  • Add them to the cooked meat and allow to cook for 5 minutes.
  • The idea is to avoid adding them too early as they will overcook.
  • Serve hot with rice mashed potatoes or your choice of accompaniment.
