Mixed Berry Cheesecake with Berry Coulis

I hope you get to try this recipe out, it’s easy to follow but the trick is in cooking it where you need to ensure it’s a little wobbly on the centre but firm on the outer. Leave it cool and then put it in the fridge to get cold. if you don’t have raspberries you can use only the strawberries and make sure you have the berry coulis ready to make it complete. For the coulis, be careful not to have too much sugar especially if your berries are naturally sweet.

Ingredients:

  • 125g digestive biscuit (Crushed)
  • 1 tbsp sugar
  • 90g Unsalted butter/margarine Melted
  • 500g Cream cheese
  • Lemon zest (from 2 small lemons), Finely grated
  • 4 eggs
  • 160gm sugar
  • 250g strawberries
  • 125g Raspberries

Berry Coulis:

  • Juice from 1/2 a lemon
  • 125g Strawberries
  • 125g Raspberries
  • 1/2 cup sugar

Method:

  1. When crashing the digestive biscuit make sure you have fine crumbs and you can either use a blender to do it or in a plastic bag crush it with a rolling pin.
  2. Prepare the a small spring foam pan by lining the base and sides of with baking paper. A spring foam pan is the one that can be expanded from the side to remove the baked cake.
  3. Preheat the oven to 160ºC
  4. Mix together the crushed biscuit, 1 tbs sugar, the melted butter/margarine stir and combine to form a moist mixture.
  5. Press the mixture into the base of the prepared pan and refrigerate until firm.
  6. Meanwhile, using an electric mixer or hand whisk beat the cream cheese with the remaining sugar and lemon rind until soft. Add the eggs one by one, mixing well after each addition. Pour the mixture onto the biscuit base.
  7. Bake for 25 minutes in the preheated oven or until firm and only the center of the cheesecake looks a little wet and wobbly. Reduce the heat incase the cheese cake becomes too brown before it’s done. increase the time and check after 5 minutes if need be.
  8. Allow to cool then refrigerate overnight or until set while in the pan.
  9. Remove from the pan and decorate with strawberries and raspberries and pour the berry coulis over the cheesecake before serving.

To make the coulis:

Blend all the ingredients together until smooth and sugar crystals have dissolved.

When done, you can choose to strain the sauce through a course sieve to remove the seeds.
